Pot Roast, slow cooked comfort food.

Pot roast is comfort food. The only problem is you spend an entire day being tortured by it cooking. It takes 10 minutes to prep but 8 - 9 hours to cook. The wait is completely worth it though.

Potato and pork hash

I get home from work relatively late in the evening and my wife has usually gone to bed. Since I'm cooking for one I tend to just throw things together that "should" taste good. Most of the time it's just alright. Sometimes though a miracle happens and it's really really good. This is one of those awesome ones.

Hashbrown Caserole

Someone mentioned thanksgiving a few days back after work & made me think of this recipe. This originally started out as a copy of the uncle hershel's hashbrowns from Cracker Barrel, but it's slowly been adjusting into something different & (at least imo) better. cleanup is fairly simple after cooking with a brief soaking if you don't use a disposable pan, but you can also divide it into smaller disposable foil pans & just freeze it till you want to cook it. It's easy to make and turns into great leftovers for breakfast (or whenever).  Just about everything in the recipe boils down to a can/bag of  "yea that much"* making it an easy brain not required recipe. It's great warm or cold, microwaves fine, and has the benefit of being reasonably filling.  Plus it's different enough that you can make a big thing and let everyone chatter over it while you spend time not giving a f**k across the room at one of "those"  types of gatherings.

scotch pancakes

I got this from an episode of F-word ages back & converted it from ml and other annoying measurements.  Scotch is apparently the British term for Scottish.  You can make just the pancakes, the recipe is nice for making a fairly smallish batch of nice light pancakes (almost crepelike).  Technically it's desertish, but so are those baked apple pancakes you see at breakfast places like original house of pancakes ;) .

Mango peach cilantro lime chicken

I made some awesome chicken recently in my crockpot for fajitas, it's an "eat tomorrow" recipe, but only takes about 2 minutes of work (if that). The original recipe called for a 16 ounce jar of salsa, but I used 2 cups of the mango peach salsa from Costco on a hunch that it would be good, turns out it was awesome. The chicken is different enough to be a nice unexpected change of pace in a fajita, but "normal" enough to not make anyone look at you funny.

Stupid easy sausage gravy.

Sunday night, football, beer and Brinner?!?! The wonderous blending of dinner and breakfast, and in my family it ain't breakfast unless there's sausage gravy to pour over your favorite biscuit recipe or in the case of this past weekend I smothered scrambled eggs, french toast, bacon and just about everything else on the plate with it.

Cheddar Broccoli

I was in the mood for broccoli covered in cheese but there is no store bought version that even remotely tastes good. Instead I decided to make one up. It's cheesy and just a bit spicy but damn is it good.

Lasagna, both hearty and delicate at the same time.

This weekend I made lasagna. I haven't made it in a while because it's really time consuming, the end result however is well worth the effort. I use paper thin pasta and a hearty meat sauce. This recipe takes so long because I make both the pasta and the sauce from scratch.
